1 pound ground beef
1 1/2 cups onion, chopped
1/2 tsp. salt
1/2 tsp pepper
1 1/2 cups milk
3/4 cup buttermilk baking mix (such as Bisquick)
3 eggs
2 tomatoes, sliced
1 c. cheddar cheese, shredded

Directions:
Directions:
Heat Oven to 400 degreees. Grease a 10 inch pie plate. Brown beef and onion. Stir in salt and pepper. Spread in plate. Beat milk, baking mix and eggs until smooth, a blender works well. Bake 25 minutes. Top with tomatoes and sprinkle with cheese. Bake 5 to 8 minutes more or until knife comes out clean. Cool 5 minutes before serving.
