½ lb. ground beef
½ medium onion
½ tsp. salt
½ tsp. garlic salt
½ tsp. baking soda
1 ½ cup corn meal
1 cup milk
1/4 cup vegetable or canola oil
3-4 chopped jalapeño peppers
1 ½ cup grated cheddar cheese
1 egg
1 can cream style corn

It is best to bake this corn bread in a cast iron skillet but a large Pyrex dish will work as well.

Brown ground beef and chopped onion in skillet.
In a separate bowl combine corn meal, egg, baking soda , salts, milk, oil, corn, jalapeños, and 1 cup cheese.
Add 1/2 of above corn meal mixture to cast iron skillet or Pyrex dish. Add meat mixture. Layer 1/2 of remaining cheese then the remaining corn meal mixture. Bake at 425 degrees until done. Approximately 30 minutes.
