1 c sauerkraut (drained)
1-8oz cream cheese
1/2c sour cream
Few spoonfuls mayo
½ c chopped ham (add more if you like)
¼ c diced onion (green if you have it)
Garlic salt (a few shakes)
Dill (about 2 tsp…more than you would think)

Mix all ingredients. Add more sour cream if you like it softer, or to stretch it out. Taste it to see if it needs more seasoning. Best to make earlier in the day in order to mesh the flavors. Serve with crackers.
Ingredients are guesstimated, so don't be afraid to add more or less of something.

Sauerkraut was a standby for almost all pioneer families. Without refrigeration, pickling was one of the few methods to preserve vegetables. It was not until about 60 years ago that nutritionists discovered that sauerkraut and pickles are also an excellent source of vitamin C. So, try it! You will probably love it!
