2-3 cans of refrigerator biscuit (not buttermilk)
4-5 Roma tomatoes-cut in small pieces
Fresh basil-washed and cut into small pieces
Mozzarella cheese-as much or as little as you would like
Mayonnaise-to taste
Dried Basil
Salt-to taste (be generous!)

Directions:
Directions:
Spray muffin tins with non-stick spray. Place one biscuit in each and form a small "nest." In a bowl, mix cheese, tomatoes, fresh basil, mayonnaise, few shakes of dried basil, and salt. Place a large dollop of mixture in each "nest" and sprinkle the tops with dried basil. Bake according to biscuit directions.
