2 tbsp olive oil
1 small onion
1 garlic clove crushed
1 small carrot, grated
1/2 small red bell pepper, diced
5 oz ground beef
1/4 tsp ground cumin
1/2 tsp cinnamon
1/4 tsp ground coriander
1 cup tomato puree
1/2 cup chicken or vegetable bouillon
6 apricots (dried)
salt and pepper (add to taste)

Directions:
Directions:
1. Cook the meat in the oil, stirring add the onion, then the garlic. When those are soft, add the grated carrot, and bell pepper. Cook for an additional 3 minutes.
2. Add the spices to the meat and vegetables.
3. Pour in the tomato puree and bouillon. Stir well. Simmer, 1/2 covered for 30 minutes.
