Sweet Potato Casserole Recipe

Casserole:

5-6 Sweet Potatoes/Yams (med-large size)
1 Stick Butter
2 Eggs
1 Tsp Vanilla
1/3 Cup Sugar
1/3 Cup Milk


Topping:

1 Stick Butter
1 Cup Light Brown Sugar
1/2 Cup Flour
2 Cups Chopped Pecans (If you like pecans, add an extra cup!)

Directions:
Directions:
Bake potatoes at 400° F until easily pierced with a knife (approximate 1 hour).
Bake in Dish or Pan lined with Aluminum Foil to aid in clean-up.
Let Cool (or store overnight in the refrigerator).
Peel and mash sweet potatoes.
Mix in 9x12 Glass Casserole Dish
Potatoes, 1 Stick butter (Soft), 2 Eggs, Vanilla, Sugar and Milk.
Topping: Melt Butter, Add Light Brown Sugar, Flour and Pecans
Spread topping evenly over potato mixture.
Bake at 350°F for 30 minutes.

Note: Variations of recipe has been successful when switching the brown sugar with artificial sweetener as well as adding small marshmallows to the topping mixture. Margarine does not work as well as butter.
