11/2 c. of all-purpose flour
2 tbsp. of sugar
1 ripe banana
1 large egg
1/4 tsp. salt
11/2 c. of skim milk/soy milk
3 tbsp. butter melted
1/2 c. olive oil for frying or olive oil cooking spray

Directions:
Directions:
Mash the banana in a separate bowl. Mix together milk, banana, eggs and butter in a large bowl then add the dry ingredients mix till all ingredients are well blended. Heat a frying pan over a medium heat, if using a cooking spray, spray a little bit to cover the pan then pour out 1/4 c of the mixture and tilt the pan so that you get a nice round shape. When the edges appears to be dry flip the crepe and cook the other side till slightly brown and the edges are golden brown. Repeat the process until all the mixture is gone. You may serve it with a cup of tea or milk. You can use the crepe to wrap you favorite fruits or creme and eat as a snack.
