Large cookie sheet and 375 degree oven

3 Pkgs. Frozen Plain Artichokes or 3 Cans of
artichokes packed in water no oil.
2 large cloves garlic through press
1/2 medium red onion chopped
1.2 C fresh parsley roughly chopped
6 TBS capers (if you like them)
1/2 jar roasted red peppers sweet chopped
S&P to taste.

Directions:
Spread drained (is using can) artichokes on baking sheet. Drizzle Olive Oil over artichokes to coat well.
Bake in oven for 20 mins, turning twice.

Chop, onion, pepper, parsley. Take artichokes from oven and cool. Put into a large bowl and add rest of the chopped ingredients. Toss with vinaigrette's below.

Vinaigrette's

1 garlic through press
1/4 C red wine vinegar
1/2 C olive oil

Put the garlic, vinegar and olive oil in a blender and mix until frothy. Pour over artichoke and peppers, onions and parsley. Toss well. Add drained capers if desired. Black olives can also be added as well as chopped fresh tomatoes.
