2 c. of rice
1 can (or frozen) peas of your choice (black eyed, pigeon peas, split peas, red beans)
1/2 pk. frozen coconut milk
Seasonings to taste (chopped onion, garlic, thyme, celery, Ms Dash, powdered cubes)
1/2 lb. salted pig tails (or your choice of cured meat)
Fresh meat (chicken, beef etc.)

Directions:
Pressure pig tails or other cured meat until soft (discard excess salt water after meat is soft). Sauté fresh meat of choice until half cooked with seasonings of your choice. Add sautéed meat to pig tails/cured meat and 2 & 1/2 cups of water. Bring to boil and add 2 cups of washed rice, peas, seasonings of choice & coconut milk. Cook on medium fire until water is dried out and rice and peas are soft.
