8 oz. (240gm) Rice Flour
4 oz. (120gm) Sugar
1 tsp. Yeast
1/2 tsp. ground cardamom
1/2 c. water
Oil for shallow frying
Milk for creaming the yeast

Directions:
Directions:
Add cardamom to rice, sift into a large mixing bowl, and add sugar. Mix warm water and flour to make a thick batter. Cream yeast with a little warm milk and sugar and leave to dissolve. Add the yeast to batter. Stir well until the batter produces air bubbles. Leave batter covered for at least 6 hours or until it rises and produces a lot of air bubbles. Heat oil in a frying pan. Fry the batter in tablespoonfuls, spreading them to form a good shape and even thickness. Fry on both sides until cooked and golden brown. Drain off excess oil. Serve for snacks.
