1/2 c butter
6 tbsp whipping cream
1/3 c. sugar
1/2 tsp salt
1/2 tsp cardamon
1 pkg dry yeast
1/4 c warm water
3 eggs
About 4 cups flour
24 raisins and 12 whole blanched almonds
1 egg yolk beaten with 1 tbsp water

Melt butter, stir in cream, sugar, salt and cardamon. Let cool to lukewarm. Meanwhile, in a large bowl of electric mixer combine the yeast and warm water, let stand 5 min. to soften. Add the cooled butter mixture, the eggs and two cups of flour. Mix until well blended, then beat at medium speed for two minutes. Gradually stir in about 1 2/3 cups flour to make a stiff dough. Turn onto board and knead until smooth, about 10 min. Return to oiled bowl and let rise 1 1/2 hours. Punch down, divide into 12 equal portions. Pull off a 3/4 inch ball for the head. Pinch off about an inch of dough to use for the tail. Form the body in a round ball, make the tail by flattening it with your thumb and then use a knife to slash the tail into feathers without cutting all the way through. Attach to the body. Roll the head and attach to the top of the body. Make slits for eyes and place in raisins. Make a slit for the beak and insert an almond. Make wing slashes on each side of the body. Cover with plastic wrap and let rise until puffy. Before baking be sure to secure the raisins and almonds or they will pop out when cooking. Brush doves with egg wash and bake at 375º for 12-15 min.

I began making these the year Nettie was born for Easter dinner. I usually double this recipe and often make two double batches to give away to friends. You have to visualize a little dove when creating these.
