5 Potatoes
1 Onion
1 c. Green Peas
1 1/2 tsp. Salt
3 Garlic chopped
4 tbsp. Vegetable oil
1 Green chili (finely chopped)
1tsp. Ground coriander
Few Cumin seeds
Cilantro
For Pastry:
2 c. Flour,
1/2 tsp. salt,
4 tbsp. Vegetable oil,
6 tbsp. water

Directions:
Directions:
For the pastry: Add 1/2 tsp salt to the flour. Add water and oil to the flour. Knead the dough until it is soft or for about 10 minutes. Let the dough rest for 30 minutes.
Potato Filling: Boil and cool Potatoes. Peel and cover. Saute chopped onions and chopped green chili in oil. Add crushed garlic stir while frying. Add cooked potatoes, coriander powder and salt. Cook for 5 minutes on low heat. Garnish with chopped cilantro leaves.
Knead the dough again and make 10 balls. Roll into flat round shape about 5 in.diameter then cut into half. Make each half into a cone by sticking the seams together with a little water.
Fill each cone with about 2.5 tbsp of the potato mixture. Stick the top of the cone together with a water. The seam should be about 1/4 in. (5 mm) wide.
Pour oil (up to about 2 inches) in a frying pan and heat over low-medium heat. Fry Samosas (as many as you can fit into the pan) until golden brown and crispy,
