5 large sweet potatoes (about 4 lbs.)
/4 cup sugar
1/4 to 1/3 cup brandy
3 Tbsp butter, melted
1 tsp salt
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/8 tsp pepper
1 Tbsp butter
1 Tbsp grated orange rind
Garnish: orange slices

Directions:
Directions:
Cook sweet potatoes in boiling water to cover (45 minutes or until tender). Cool to touch. Peel and mash potatoes.
Stir in sugar and next 6 ingredients; spoon into a lightly greased 11x7 baking dish. Brush top with 1 Tbsp melted butter; sprinkle with orange rind.
Bake at 350ºfor 25-30 minutes. Garnish with orange slices if desired.
