1 T. vanilla
1 c. cooking oil
1 tsp. baking powder
2 c. granulated sugar
2 tsp. cinnamon
3 c. sifted flour
1 tsp. salt
1 tsp. baking soda
2 c. unpeeled zucchini, grated
1/2 c walnuts

Directions:
Directions:
Pre-heat oven to 325º. Beat together eggs, vanilla, cooking oil, baking powder, granulated sugar and cinnamon. Add flour, salt and baking soda. Fold in zucchini and walnuts. Pour into 2 greased and floured loaf pans. Bake for 1 hour.
