3/4 Hunza apricots

3/4 c. almonds, blanched

1/2 c. pistachios

1/4 c. cashews

1 1/2 c. yogurt

1/2 t. salt

1/2 t. white pepper

bay (or cinnamon) leaf

1 inch cinnamon stick

3 cloves

3 onions finely chopped

1 inch of fresh ginger

4 cloves of garlic

1 chile

1 t. coriander powder

1/2 t. cumin powder

1 t. red chile powder

2 tomatos chopped

1 T ghee

1/2 walnut pieces

3/4 t. seedless yellow raisins

1/4 t. garam masala powder

3 t. light cream

a few maraschino cherries

Directions:
Directions:
1. Soak apricots for an hour

2. Soak the almonds and pistachios in hot water for 1 hour. Remove the skin and reserve the soaking water.

3. Grind 1/3 cup cashews, add little water to make paste.

4. Whish yogurt, add salt and pepper

5. Heat oil in a skillet with bay leaf, cinnamon, cloves and coriander. Add onions, then ginger, garlic and chiles and saute. Onions must be dark. Add powders.

6. Remove skillet and cool. Remove bay leaf and cinnamon, put it in the blender and pour into pan. Add the whisked yogurt, cashew paste, 2c. water, salt to taste. Cover and simmer for 15 mins.

7. Heat ghee in a skillet and saute almonds, cashew, walnut pieces, raisins, apricots and most of pistachios for 7 mins.

8. Add nuts and fruit mixture to the gravy and cook, covered, on a low heat for 15 mins. Sprinkle garam masala powder and cook for a further 5 mins, until the nuts are tender.

9. Garnish with swirls of cream, flaked pistachios and maraschino cherries just before serving.
