5 T butter
5 tsp. flour
2 buds of minced garlic
1 medium onion, diced very small
1 qt. milk (preferably whole
2 c. shredded cheddar cheese
2 c. shredded Romano cheese
1/4 c. grated Parmesan cheese
1 lb. rigatoni
1/2 c. panko or bread crumbs
1/2 tsp. white pepper
1/2 tsp Tabasco sauce
pinch of paprika

Preheat oven to 350*.
Sauce: In a medium saucepan melt butter over medium heat. Add garlic and onions and saute until transparent. Add flour cook stirring constantly to form a light roux. Reduce heat add milk and seasonings and stir with wire whisk until thick and smooth. Remove the pan from the heat. Add shredded cheeses and stir until melted and sauce is creamy. adjust seasoning to taste.
Pasta; Cook until just al dante(very firm). Drain and put in large bowl. Add sauce and mix. Put into a buttered 11X9" pan. Melt 2 T of butter in a saucepan. Add the panko and toss. add the Parmesan cheese and the paprika. Toast a minuet and top the casserole. Bake approximately 30 min. until to is golden brown and cheese is bubbly.

Try putting this on a sheet pan and baking to make it less creamy and crunchy. Interest as a main course. Usre the casserole version for a side dish.
