3 c. white rice
2 - 2 1/2 lbs. Chicken
1 tbsp. Chicken bouillon
3 tbsp. Soya sauce
1 bundle of bora or 12 oz pk. green peas & carrots
2 large onions
4 eggs
1 head of green onions
Salt
Oil for frying
Black pepper

Directions:
Directions:
Cook the rice until it is loose and firm, then allow to cool. Cut the chicken into quarters, then wash and season with salt, black pepper and about 1 tablespoon of Soy sauce. Heat the oil and fry the chicken until almost done. Chop the and onions. Remove any bones from the chicken, and cut the meat into strips across "the grain". Scramble the eggs. Fry the onions, add the chicken strips and stir. Add finely chopped bora or peas and carrots, chicken bouillon, black pepper, and stir fry.
Add the rice and stir fry in a deep skillet or wok.
Add the rest of the Soy sauce, the scramble eggs, and chopped green onions, continuing to stir fry. Add more soy sauce if the fried rice needs more seasoning. Place on a platter sprinkle with the rest of the green onions for garnish. Serve hot.
