1/2 cp boiling water
1/4 cp granulated sugar
2 tbsps shortening
1/2 tsp salt
1/2 cp canned evaporated milk, undiluted
1/2 pkg active dry yeast (1 tsp)
1/4 cp warm water (105 to 115f)
1 egg, beaten
3 1/2 cps sifted all purpose flour (sift before measuring)
oil or shortening for deep frying
confectioners' sugar

Directions:
1) Pour boiling water over sugar, shortening, and salt in large bowl; stir to dissolve sugar. Add milk. Cool to lukewarm.
2) Sprinkle yeast over warm water in small bowl; stir to dissolve. Stir into milk mixture; with egg.
3) Add 2 cps flour; beat with wooden spoon until smooth. Add remaining flour; beat dough- about 2 mins, or until smooth (dough will be soft).
4) Place in lightly greased bowl; turn to bring up greased side. Cover with waxed paper and towel. Refrigerate until well chilled-- about 4 hrs.
5) Remove dough from refrigerator. Divide in half. On lightly floured surface, roll out half of dough into 9 x 8 inch rectangle. Cut into 2 pieces. Remove pieces to cookie sheet; cover with towel. Repeat with other half of dough. Let pieces stand at room temp, 45 mins.
6) In electric skillet or heavy saucepan, heat oil (from 1 1/2 to 2 inches deep) to 360f on deep frying thermometer.
7) Gently drop pieces, 4 at a time, into hot oil. As pieces rise to surface, turn with slotted utensil. Fry until golden brown on both sides-- about 3 mins in all. Drain on paper towels. Sprinkle with confectioners' sugar. Serve warm.
