1 c. rice American cheese cut into
1/4x1/4x1" pieces
4 c. water
1 tsp. salt
2 eggs
1 tbsp. chopped parsley
3 tbsp. grated romano cheese
Beat the eggs, cheese and parsley together'

Directions:
Directions:
Combine rice,water and salt in sauce pan.
Bring to a boil,lower heat and simmer until all the water is absorbed and the rice is PASTY.
Remove from heat and add the remaining ingredients mixing well. Cool on a platter just enough to handle.Shape into croquettes inserting a piece of American cheese in the center of each.
Roll in bread crumbs, fry in deep oil unti golden brown. Drain on paper towel, Enjoy.
