1 6 oz. package orange jello
2 c. boiling water
1 14 oz. can crushed pineapple, drain and reserve juice
1 11 oz. can mandarin oranges, drain and reserve juice
1 c. orange juice
1 4.3 oz. package Jello brand Cook & Serve Lemon Pudding and Pie filling (not instant)
1 c. whipped whipping cream
1 c. mild, grated cheddar cheese (Borden's mild, finely shredded cheddar cheese is a good one)

Directions:
Directions:
Dissolve jello in 2 c. boiling water. Combine the drained pineapple juice and drained mandarin orange juice to make 1 c. of juice, then add the 1 c. orange juice. Stir fruit juice into the dissolved jello. Add pineapple and mandarin oranges. Pour into a 9x13 dish and refrigerate to set. Prepare lemon pie filling according to package directions and let cool completely. When cooled, stir in the whipped whipping cream. Spread over set jello and sprinkle with cheese. Cover and keep jello in refrigerator until serving. Can be made the night before serving.
