Chicken Florentine Recipe

2 pieces chicken breast
4 slices deli ham
4 cups fresh baby spinach
10 white mushrooms
2 roma tomatoes
1 red pepper
1 small can of sliced olives
1 red onion (small)
2 cloves garlic
1/2 cup shredded cheese (any kind you like)
1/2 cup sundried tomato and oregano salad dressing
2 tsp real lime juice (bottled or fresh)
3 tbsp herb and garlic light cream cheese
2 tbsp butter or margarine
salt and pepper (to your taste)

step 1.
preheat oven to 350 degrees
slice or press garlic
place half of it in frying pan with 1 tbsp butter and saute
add chicken breast and cook through

step 2.
cut mushrooms into 4 quarters
slice onion (medium thickness)
slice red pepper (long thin slices)
in another frying pan add 1 tbsp butter, left over garlic, mushrooms and onions, saute
leave sautéing for about 5 min on medium heat
add red peppers, lime juice, salad dressing

step 3.
after chicken is cooked through, take off of heat and place on baking sheet
spread cream cheese evenly over both pieces
add ham slices and cheese
bake until cheese is bubbling and golden brown
remove from oven

step 4.
add 2 cups spinach to mushrooms, onion, red pepper and fold in
this will only take approximately 45 seconds, do not over cook spinach, it will become grainy
remove from heat

step 5.
use left over spinach and place equal amounts onto 2 plates
take cooked spinach and the other ingredients and place on top of uncooked spinach
add chopped tomatoes and olives
place chicken on top

serve with garlic toast
