Dressing:
3/4 c. sugar
1 tsp. dry mustard
1 tsp. salt
1/3 c. white wine vinegar
4 1/2 tsp. onion juice (This is an old recipe so I had a hard time finding onion juice. I used the juice from a jar of pearl onions.)
1 c. vegetable oil
1 med. red onion sliced thin and separated into rings
4 1/2 tsp. poppy seeds

Salad:
Fresh spinach to fill a good sized salad bowl
1/2 lb. sliced fresh mushrooms
3/4 lb. bacon, fried crisp and broken into small pieces
1/2 c. cottage cheese, drained & rinsed (I know, it sounds weird)
3 or 4 hard boiled eggs, chopped
1 1/2 c. grated mozzarella cheese
Croutons (Optional)

Directions:
Directions:
Dressing: Makes 1 quart. Mix all ingredients together the night before you plan to serve your salad so the onion rings have time to marinate in the dressing. Refrigerate.

Layer your salad ingredients in a large salad bowl. Pour the dressing over it right before serving. Croutons are optional.
