2 Tablespoon butter
1 Onion, finely chopped
3 Potatoes or rutabaga, diced (I leave the peel on)
1 Carrot, finely chopped
2 Cups water (I use chicken broth: low sodium/fat)
2 Cups skim milk (I use 1% as that’s what we drink)
1 LB fish fillets (fresh or frozen) – boneless and skin removed
1 Cup corn kernels
1 teaspoon salt
¼ to ½ teaspoon pepper
Fresh parsley chopped (optional)

Directions:
Directions:
1. Melt the butter in a large saucepan
2. Add the carrot, potatoes and onion (I add garlic, too!)
3. Cook for about 5 minutes over low heat
4. Pour 2 cups of water into the saucepan & simmer covered for about 15 min. or until the vegetables are almost done cooking
5. Add the milk, corn and fish and stir
6. Simmer for about 5 to 10 minutes longer until the fish is cooked through and starts to flake
7. Season with salt and pepper and add parsley

For Fred’s and my taste this recipe needs a little more spice. I shake in Mediterranean Basil leaves, Herbes De Provence, and Smoked Paprika. I also add garlic in with the onion step and often add some pepper sauce or hot pepper flakes.
