1 bunch fresh spinach, finely chopped or 1 (12 oz.) pkg.
frozen chopped spinach, thawed
1 onion, chopped
1/3 c. chicken or vegetable stock
1 tbsp. chopped fresh basil or 1/2 tsp. dried basil
1/2 c. plain lowfat or nonfat yogurt
8 oz. lasagna noodles
6 oz. part skim Mozzarella cheese
2 cloves garlic, minced
3 c. tomato sauce
Freshly ground pepper
1 1/2 c. dry cottage cheese

Directions:
Wash, dry and chop fresh spinach or squeeze dry thawed spinach. Saute onions and garlic in stock. Add tomato sauce and seasonings. Simmer 20 to 30 minutes. Mix cottage cheese and yogurt. Cook lasagna noodles according to package directions and drain well. Spread part of sauce in a shallow 9"x13" baking pan. Add layers of noodles, spinach,
cottage cheese mixture and Mozzarella cheese. Repeat layers ending with Mozzarella cheese. Bake in 350 degree oven for 40 to 50 minutes. Makes 6 servings.
