2 c. all purpose flour
8 oz. butter, cut into pieces
8 oz. cream cheese
1 c. white or brown sugar
1 tsp. baking powder
2 eggs
1/2 c. milk (whole or soy)
1 tsp. vanilla extract or almond extract
3/4 c. coconut flakes
1/4 c. walnuts or 3 crumbled granola bars
1/2 tsp. salt

Preheat the oven to 350 degrees F (175 degrees C).
In a large bowl, stir together the flour, sugar, baking powder, and salt. Cream butter and cream cheese together then add to the dry ingredients. In a separate bowl, whisk together the eggs, milk, vanilla extract or almond extract then mix all ingredients together. Add coconut, walnuts or crumbled granola bars and mix just enough to blend. Place in a muffin pan and bake in the preheated oven for 20-25 minutes or until golden brown.
