"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 box elbow macaroni, cooked, drained, rinsed, cooled (best done the night before, add about 2- 3 tablespoons of mayo to keep the macaroni from sticking)
2 hard-cooked eggs, chopped (one in the salad one for the top)
1 celery stalk
¼ – ½ diced onion (small)
½ cup mayonnaise( Start out with a little you can always add more later)
½ teaspoons sugar
1 tablespoon vinegar
Salt & pepper, to taste
Paprika (sprinkle)

Directions:
Directions:
Combine mayo, vinegar sugar, salt & pepper mix well add to cooled macaroni potatoes and stir well. Add onion and celery. Add a little more mayonnaise, if necessary. Taste and adjust seasonings. Cover and chill for several hours before serving. The macaroni will soak up the mayonnaise so after ½ hour in refrigerator take it out and add more mayo and stir. Right before you are ready to serve give it one more stir and slice egg to garnish the top. Sprinkle with paprika
