8 red peppers
3 carrots, peeled/sliced
3 shallots, peeled/sliced
3 garlic cloves, chopped
1 pear, peeled/sliced
1 tbsp. olive oil
3 tbsp. butter
1 qt. chicken stock
1 tsp. red pepper flakes
1 dash cayenne
1 tsp. fresh tarragon + 1 sprig (for garnish)
salt & pepper to taste.

Chop & Sauté 6 red peppers, carrots, shallots, pear and garlic in oil & butter until soft (8-10 minutes). Add stock & seasonings, bring to boil then simmer 25-30 minutes.

Roast 2 red peppers on gas flame until charred. Place in paper bag 5 min. to sweat. Wash skin off & de-seed.

Puree everything except 1 of the roasted peppers. Reheat soup, julienne remaining pepper for garnish and top w/tarragon sprig
