DRESSING:

1 lemon
2 tbsp white wine vinegar
1/3 cup sugar
1 tbsp vegetable oil
1 tsp poppy seeds

DRY INGREDIENTS:

1/4 cup sliced almonds (toasted)
8 oz cleaned and hulled strawberries
1 medium sliced, seeded and cut in half cucumber
1/4 small red onion, sliced into thin wedges
1 package of baby spinach

Directions:
Directions:
Blend the dressing ingredients with a whisk and set aside. Mix the dry ingredients.
To toast the almonds bake in a toaster oven or regular oven for 5 minutes at 350º. Blend the dry ingredients and dressing right before serving.
