6 medium yams or sweet potatoes (never ever use canned) I prefer yams for their dark orange color
1/4 lb dark-brown sugar (no wimpy light stuff)
1/2 cup (1 stick) butter (C’mon, don’t cheat. Use the real thing!)

Preheat oven to 350º. First, we begin by washing off the yams. No big process. Then, you want to get out that gadget, the potato peeler. Peel the yams and throw the peels away. Slice the yams crossways. Each slice should be about 1/8- to 1/4-inch thick. Do NOT wash the slices! Get a square baking dish; about 8-inch square and about 5 inches deep is great. I start with a layer of yam slices, sprinkle or crumble brown sugar over them and then thin slice a few (6-7) butter “chips” evenly over the layer. Alternate layers of yams, brown sugar and butter chips until you run out of yams or space. Cover the yams. I use a glass lid. Bake in a preheated oven until butter and brown sugar have melted into a wonderful candy sauce and the yams are fork tender.
