3 cups cooked wild rice
1 large onion, finely diced
1 carrot, finely diced
1 celery stalk, finely diced
1 cup ham, finely diced
1/2 cup (1 stick) butter
1 cup flour
8 cups chicken broth
salt and pepper to taste
1 cup light cream or half and half
slivered almonds (optional)

Prepare the wild rice. In a 4-5 quart soup kettle, sauté the onion, carrot, celery and ham in the butter for about 3 minutes, or until the vegetable have softened slightly (this part smells so good!). Stir in the flour, a little at a time, stirring and cooking until the flour is blended in well, but don’t let it brown. Slowly add the chicken broth, stirring until all the flour-butter-vegetable mixture is well blended. Add the wild rice, adjust seasonings as desired. Heat thoroughly. Add the cream and reheat gently, but do not boil. Makes 10 to 12 servings.
