1 cup wild rice (cooked makes 3 cups)
6 stalks celery diced
1 cup dried cranberries
2 small red onions diced
1/3 cup chopped roasted pecans or other nuts

DRESSING
1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
2 tbsp. sugar
salt & pepper to taste

Directions:
Directions:
Cook wild rice 3/4 to 1 hour (it should be crunchy not mushy), add diced celery, diced red onions and nuts.

Blend dressing together and add to rice mixture. Best if done the day before use.
