1 lb whole, fresh cranberries
2 cups water
2 cups sugar
1 1/2 cup water
Juice 2 lemons
1/2 pint of whipping cream(not whipped)
2 egg whites (whipped until firm)

Directions:
Boil cranberries & water mixture 10 minutes, then let cool. While cranberries are cooling, press them with a spoon or wooden spoon through the strainer. You have strained enough when all that is left is the cranberry skins and it is dry.

While cranberries are cooling, boil the sugar & water for about 5 minutes and let cool. After cranberries are strained, add the sugar water mix to the cranberry mix. Add juice of 2 lemons.

Pour mixture into a 9x13 pan and put in freezer--checking for the ice to freeze,

When it starts to freeze (about an hour), add 1/2 pint of whipping cream (not whipped) and 2 egg whites (beaten stiff)--stirring, stirring, stirring (but gently) to blend in the cream & egg whites. Check in another 45-60 minutes; stir to blend some more.
Continue to freeze. Prior to serving, take out of freezer to thaw a bit.

Preparing this takes some babysitting through the freezing part. Well worth it. As far as I know, we're the only people who eat this!
