2-3 boneless chicken brests, cubed
1-2 tbsp. oil
2-14oz.cans coconut milk
1-2 tsp. Red Curry Paste
2 tbsp. Sugar
2-3 tbsp. Fish Sauce

Toppings:
pineapple Toasted coconut
sliced bananas Raisins
peanuts

Directions:
Directions:
In a large skillet over medium heat brown cut up chicken in oil until cooked through. Add red curry paste and stir until chicken is evenly coated (Red Curry Paste is spicy, so add it to your liking). Add coconut milk, fish sauce, and sugar. Reduce heat and simmer for 10 minutes. Serve over rice and top with your choice of toppings.
