1 cup shortening
3/4 cup sugar
1 egg
1 tsp. vanilla
1/2 tsp. lemon extract
2 cups flour
1/2 tsp. salt
2 tsp. baking powder
1 cup carrots, grated

ORANGE GLAZE FROSTING

3 tbsp. butter, softened
2 tbsp. orange juice
1 tbsp. orange peel, grated
powdered sugar

Directions:
Directions:
Cream together shortening and sugar, add egg, vanilla and lemon extract, beat well. Mix together flour, salt and baking powder add to creamed mixture. Add carrots to creamed mixture. Refrigerate dough at least 1 hour. Bake at 375º for approximately 12 minutes.
FROSTING:
Put butter, orange juice and orange peel in bowl, add powdered sugar until right consistency. Frost cookies.
