4 lbs bone-in Chicken Breast
2-3 tbsp Flour
1/4 cup Olive Oil
2 tbsp chopped Shallots
1 Minced Clove Garlic
1/4 cup Tomato Paste
1/2 cup Dry White Wine
1 tsp Salt
1/4 tsp white Pepper
3/4 cup Chicken Stock
1/2 Bay Leaf
1/8 tsp Thyme

Directions:
Directions:
Dredge chicken with flour.

Saute until golden brown in 1/4 cup olive oil. Add shallots and garlic. Add tomato paste, white wine, salt, pepper, chicken stock, bay leaf, and thyme. Simmer (covered) for 1 hour or until tender. Add more chicken stock if it gets too dry.
