Ingredients: Fries: 2 lb Russet or Baking Potatoes, Vegetable Oil for frying. Steak: 4 New York Strip steaks or other good cut, 1/3c. minced shallots, 1/4 c. minced fresh parsley, 1/4 c. minced fresh thyme, extra virgin olive oil Roasted Garlic Mayonnaise: 1 head garlic, 1 tbsp olive oil, salt, pepper, 1 c. mayonnaise, juice of 1/2 lemon.

Directions:Start with the Fries. The trick is Twice Frying so that they end up tender and fluffy inside while crisp outside. Partially peel and slice 2 # potatoes into strips. Rinse off and pat dry so that the starch is removed from the surface. Par fry at 325 º for 4-5 min or until soft but not brown. Drain, chill for 1 hr. Reheat the oil to 375º and fry 2-3 min or until golden brown. Season with salt and pepper while hot. The Mayonnaise: Preheat oven to 400º. Trim off the top of the garlic head to expose the cloves. Place on foil, drizzle with olive oil and season with salt and pepper. Wrap in the foil and roast for 30 min or until soft. Cool, then squeeze cloves into a bowl with mayonnaise and lemon juice. Mash the cloves into the mayonnaise. Cover and chill. The Herb topping: (This is herb topping great for a change or instead just use mom's old recipe of garlic salt and soy). Mince the shallotts, parsley and thyme and combine. Chill and set aside. Grill steaks to desired finish, top with the herb topping and drizzle with olive oil. |
