1 package Jiffy cornbread mix
1/4 cup vegetable oil
1 egg lightly beaten
1 cup sour cream or cottage cheese
1/2 cup milk
1 can whole kernel corn, drained
1 cup salsa
1 cup cheddar cheese
1 onion chopped and sauted in 2 T butter (use microwave)

Directions:

Preheat oven to 400 degrees. Lightly grease a cast-iron skillet, or if you prefer thinner, crispier cornbread, a 10 x 13 dish.

Combine cornmeal mis, egg, sour cream, milk, onions, corn, salsa, cheese and stir until just blended.

Pour into pan/dish.

Bake for 30-35 minutes or until golden brown.
