4 boneless skinless chicken breast halves
Flour
2 T. butter or margarine
1 T. vegetable oil
Salt and pepper to taste
2 to 4 T. lemon juice
2 to 4 T. dry sherry

Directions:
Directions:
Pound chicken breasts lightly to 1/4-inch thickness; cut into serving pieces. Coat chicken lightly with flour. Heat butter and oil in skillet until butter is melted. Add chicken; cook until browned, 3 to 4 minutes on each side. Remove chicken, sprinkle lightly with salt and pepper. Add sherry and lemon juice to skillet; cook until sauce is thickened, scraping drippings from bottom of skillet. Return chicken to skillet; cook 2 minutes, turning chicken to coat with sauce. Serve sauce over chicken. Good with pasta.
