6 ounces fresh, frozen or canned crab meat
1 egg, beaten
2 T. minced celery
1 T. minced onion
1 T. mayonnaise
1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. cayenne pepper
1/3 C. crushed saltines
Vegetable oil
Tartar sauce

Directions:
Directions:
Mix crab, egg, celery, onion, mayonnaise, salt, pepper and cayenne pepper in medium bowl. Mix in half the saltines. Form crab mixture into 4 patties; coat with remaining saltines. Refrigerate crab cakes 1 hour. Heat 1/4 inch oil in skillet on medium heat. Add crab cakes; cook until golden, 2 to 3 minutes on each side. Serve hot with tartar sauce.
