Corned Beef Brisket with spice packet
3 ribs celery cut in 3" pieces
1 yellow onion cut in large dice
8 red potatoes
8 carrots peeled and cut into 2" pieces
1 large head of Cabbage.
Other veggies as desired ie., turnips, brussel sprouts etc..

Directions:
Directions:
In a large pot place beef, celery and onion.
Cover with water. Bring to boil.
Reduce heat and simmer with lid on for 2 1/2 hours. Add scrubbed red potatoes and carrot chunks.
Add water if necessary to cover.
Cook 30+ minutes until potatoes are tender.
Cut cabbage into 1/8 ths and steam on top of vegetables 5-10 min until tender.
Serve with rye bread and coarse grained mustard.
Remove meat and slice, place on warm platter and surround with vegetables.

As the family grew, each family would cook this at home and then bring it to Nana's to serve as a potluck feast. We tried to find unique brands of Irish Ale to serve with our meal.
