1 Large Onion Chopped
2 Green Pepper Diced
2 Red Pepper Diced
9 Carrots Sliced
3 Cloves Garlic (pressed or finely chopped)
1 Cup Vinegar
3 Cups Sugar
10 tbsp. Soya Sauce
10 tbsp. Corn Starch
2 Large Cans Pineapple Chunks

Directions:
Directions:
Precook the carrots in 3/4 cup of water for 10 minutes. Drain and set aside - save the cooking water for the sauce.

Mix all ingredients except for the veggies and pineapple in a large pot. Stir gently until it begins to thicken and then add the veggies.

Simmer until veggies and carrots are tender but not soft.

Add cooked meatballs till heat through.

this makes a large batch and extra can be frozen for later use. Serve rice on the side.

For spareribs - season with salt, pepper and garlic and place in a roaster in the oven at 350 for 2 hours or until tender (drain off fat). Pour sauce over and heat through.
