3 lbs. stew beef
3 potatoes quartered
1/2 lb. baby carrots
2 medium onions, quartered
3 c beef stock
1/2 can of tomato paste
1/2 c. sherry or burgundy
olive oil, salt, pepper, garlic

Directions:
Directions:
Season beef that has been cut into 1" cubes with salt and pepper. Crush 1 bud of garlic and saute in oil in saucepan. Add beef and brown on all sides. Transfer to 4 quart saucepan. Add beef stock and cook on low until almost tender, about 1 hour. Brown the potatoes in the oil from the beef in the saucepan. Add to the 4 quart dish. Cook about 20 min. Add the carrots and cook for another 30min or until everything is tender. Add the tomato paste. You may have to add more beef stock if it has evaporated. Add onions. Thicken with cornstarch.
