1 1/2 c. Vegetable Oil
2 c. Brown Sugar
3 Eggs
2 c. Flour
2 tsp. Cinnamon
2 tsp. Baking Soda
2 tsp. Vanilla
1 tsp. Salt
3 c. Shredded Carrots
1 c. Chopped Nuts
1/2 c. Crushed Pineapple (drained)

Directions:
Directions:
Combine oil, brown sugar and eggs. Beat together. Add flour and spices. Mix well. Add carrots, nuts and pineapple. Mix well. Bake 1 hour at 350º in a greased and floured 9x13x2 pan.
