Directions:
In a large bowl, combine 1 can of white chunk chicken meat (drained & shredded), 1 cup of mixed cheese, 1 cup sour cream, 1/4 cup green chilies and 1/2 cup enchilada sauce. Set aside. Take the flour or corn tortillas and spread a little enchilada sauce on one side, then spread a generous spoonful of mixture on top and roll the tortilla up and place in pan. Continue to do this until all of your mixture is gone. Cover with remaining can of enchilada sauce and 1 1/2 cups of cheese (depending on how many enchiladas you make, you may need more sauce). Cover dish with aluminum foil and bake at 325 degrees for approximately 30 minutes, then uncover and bake for 10 more minutes. Serve with sour cream.
