Cake:
2 c sifted cake flour
1 2/3 c sugar
3 squares unsweetened chocolate (melted)
1/2 c shortening
3 eggs
1 tsp vanilla
1 tsp salt
1 1/2 tsp baking soda
1/2 tsp double acting baking powder

Icing:
1/3 c shortening
1 egg
3 c confectioners' sugar
1/4 tsp salt
2 1/2 sq unsweetened chocolate
5 TB cream

Directions:
Directions:
Preheat oven to 350º Grease and flour 2 9" cake pans
Combine flour, sugar, salt, soda and baking powder in mixing bowl. Add shortening, melted chocolate and 2/3 c milk. Beat for 2 minutes, scraping bowl frequently. Add eggs, 2/3 c milk and vanilla. Beat for 2 minutes. Pour into cake pans. Bake 35 to 40 minutes. Cool 10-15 minutes, remove from pans and cool on wire cake rack.

Icing:
Mix shortening, egg, sugar, salt. Add chocolate and beat thoroughly. Add 5 TB cream, one at a time, beating until smooth and a good spreading consistency.

For Mocha icing:add 1 TB instant coffee, dissolved in cream.

Mint Icing: add 1/8 to 1/4 tsp mint flavoring during final beating.
