4 cups hot water
2 Tbsp cider vinegar
2 Tbsp sugar
1/2 tsp ground pepper
1 large onion - cut into wedges
1- 3lb. corned beef round or brisket, packaged with spices
8 small white or yellow potatoes, scrubbed and cut into quarters
1 head of green cabbage, cored and cut into small wedges.
Carrots (optional)

Directions:
Combine water, vinegar, sugar, pepper, and onions into a slow-cooker, mixing well. Place corned beef in the mixture. Cover and cook on high for 4 hours. Insert potatoes along the sides and scatter cabbage wedges and carrots over the top. Cover and conitnue cooking on high for 3 hours longer, or until beef is tender. Serve with some of the cooking liquid spooned over the top of the beef to keep it moist.
