1 2/3 cups sugar
1 1/3 cups water
1 cup raisins
3 tablespoons butter
3 large carrots, grated
1 teaspoon cinnamon
1 teaspoon cloves
1 teaspoon nutmeg
1 cup chopped walnuts
2 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder

Frosting:
6 oz. cream cheese
4 tablespoons butter
1 tablespoon vanilla
4 cups powdered sugar
2 tablespoons milk

Directions:
Directions:
In a 3 quart sauce pan, add sugar, water, raisins, butter, carrots, cinnamon, cloves and nutmeg. Stir and simmer for 5 minutes. Cover and let rest for at least 1 hour up to 12 hours. Then add walnuts, flour, salt, baking soda and baking powder. Mix well. Bake in lightly oiled 8X8 baking dish or loaf pan at 275 degrees for 1 1/2 to 2 hours. Let cool.

Frosting:
Cream together butter and cream cheese; add vanilla. Stir in sugar and add milk slowly to get the right consistency. Pour over cooled cake. You can eat the cake plain if you wish.
