2 C. frozen hash browns
1/4 C. chopped onion
8 eggs
1 C. shredded cheese
1 C. cooked meat / links / ham chunks /
bacon or bulk sausage.
8 - 10” flour tortillas
Salsa, sour cream,, extra shredded cheese.

In skillet fry hash browns in oil until cooked, but not browned, add onion, continue to cook 2 more min. until onions start to soften, add cooked meat. Pour eggs over spuds, cook stirring until eggs are set. Add 1 C. cheese. Meanwhile, have tortillas warming ( in an oven proof dish, place a damp paper towel, put tortillas on top, place another wet paper towel on the top, put lid on and place in a warm oven, 250 for about 25 minutes) Spoon about 1/4 C. egg mix down the center of each tortilla, top with salsa, sour cream or extra cheese as desired. fold up tortilla.

I use this recipe often on the last morning of the trip. Add any leftover, cooked meat and use diced cooked leftover potatoes. Besides "cleaning the pantry" you don't even need to dirty a plate! Very tasty and filling! Breakfast on the go!!
