4 (5oz.) Mahi Mahi fillets

Marinade:

1 red onion, chopped
1 1/2 tsp. dried thyme
2 scallions green tops
1 tsp. allspice
1/2 tsp. cinnamon
1 T. white pepper
1/4 tsp. ground nutmeg
1 jalapeņo, chopped. Remove seeds for less heat.
2 T. olive oil
3 tsp. sea salt
Place all ingredients in a blender and process for 15 seconds. there will be extra marinade. Marinade can be refrigerated for 1 week or frozen up to 2 months.

Season the fish with salt and spoon 2 T. of the marinade on each side. Place onto a hot grill or grill pan, over medium heat. After about 2 minutes (should be brown) turn over and cook 3-5 minutes, until fish is cooked through.
