6 cups organic chicken broth
1 lb organic chicken breasts, cooked and shredded
1 onion, chopped
1 jalapeņo or serrano chile, chopped
1 package organic frozen corn
1 container organic grape or cherry tomatoes
1 bunch cilantro, chopped
1/2 tsp. cumin
Salt and Pepper to taste
lime wedges

Directions:
Directions:
Boil or steam chicken breasts and shred. Saute onion and chile in olive oil in a soup pot. When softened, add corn, chicken, cumin, salt and pepper and stir. Add chicken broth and simmer for 20 minutes. Add tomatoes and cilantro and simmer another 5 minutes. Add a squeeze of lime to each bowl and serve with tortilla chips.
